Chinese style tofu and zero carb noodles!

So after writing about my recent love affair with shiritake noodles, as promised here is one of many recipes I’ve whipped up with them!

Great thing about this recipe is it’s full of protein, loads of good veggies and tastes better than any Chinese I’ve ever had. Plus if you are trying to lose weight and looking for a filling low calorie meal that’s not a salad, look no further ;)

I was rushing to make this a failed to take any pictures bar a few of the final piece but it’s really simple to follow and if you’re not a fan of tofu, chicken works just as well. Same for the noodles, obviously I’m obsessed with these noodles but mainly because most other noodles bloat me, if you don’t have any problems then of course go ahead and try it with your normal choice. However I would still say, you have to try shiritake!

Recipe

Ingredients -

  • 150grams of plain tofu drained
  • 200grams of pak choi
  • 100grams of broccoli
  • 1 pack or 200grams of shiritake noodles
  • Light soy sauce, fresh or powdered ginger, pepper, hot sauce

Method -

  1. In a cup combine, 3Tbsp of light soy sauce, 6Tbsp of water, 1Tsp of powdered ginger and a dash of hot sauce. Mix and leave aside.
  2. Slice the tofu in to strips and place under grill for 2 minutes either side, until it begins to firm up and turn slightly golden but not completely cooked.
  3. While tofu is under grill, place broccoli in a bowl with a tablespoon of water and cover. Cook in microwave for 3 minutes to soften. 
  4. Remove noodles from packet and soak in warm water until ready to use.
  5. Grease a large frying pan or wok with sesame oil or light cooking spray. Add the pak choi with a few tablespoons of water and allow to soften for about 4 minutes. Add in the broccoli and noodles. 
  6. Now add half the soy sauce mixture you made earlier to the pan and toss all together coating everything in the pan.
  7. Push the noodles and veg to once side of the pan and add the tofu, fry for 30 seconds either side to crisp up and then pour the other half of the soy sauce mix on top of the tofu. Fry for another minutes or so to allow the tofu to soak up the flavour.
  8. Serve up and enjoy, add extra seasonings to taste!
